Vegan BLT

 



BLT's used to be my go-to sandwich!

There is a local fast food restaurant in Greensboro, NC (my hometown) called CookOut, and I would legit get there 99cent BLT add cheese and sometimes even extra bacon. 

It was cheap, delicious, and simple. 

Things have certainly changed since my 99cent BLT days, but recently I was randomly craving one, well more like the essence of one.

So I decided to try my hand at making Tempeh! And you already know how I tried to cook it...I air-fried it!

I bought my Tempeh from Trader Joe's and I will not lie I was pretty scared. 

I have not had great success with tofu and I so desperately wanted this to be what my taste buds were craving and not a pile of tasteless mush as it seems to be with tofu. 

Don't get me wrong, I am not hating on tofu, I've had some very delicious dishes that included it, but typically not ones that I could replicate. I just don't understand why tofu hates me so much!!?

Anyways, (moving on from my tofu pain) I decided to put my big girl pants on and cook the Tempeh and oh man, oh man am I so happy I did!






I marinated it first and popped it right into the air frier and out came this beautiful piece of what I would confidently call vegan bacon.

Crispy, savory, with a hint of sweetness it was the perfect thing to use to create my dream BLT.

If you don't have an air fryer you can still make this recipe by cooking it on a skillet or even baking it instead. Really though, what you really need to do is just buy an air fryer...Just Kidding (or am I)!
