Chicken salad seems to be a summer favorite- it's light, refreshing, and easy to pack for picnics.  To be honest I was in my late teens the first time I ever ate it. My best friend and I use to go to a special convention every summer and one day her mom packed us lunch (chicken salad as you can guess!) and it blew my mind with how delicious it was. The perfect balance between sweet and savory. 

This delicious summer meal was surprisingly easy to vegan-nize. I love it because it really does take all the flavors and texture of a chicken salad but of course without the chicken, instead, I replaced it with one of my favorite proteins- chickpeas!

One of the best things about this recipe is that it not only taste delightful, but all the ingredients are actually healthy! Typically chicken salad uses tons of mayonnaise but instead of using a mayo vegan alternative, I decided to use Tahini. 

Tahini is full of antioxidants and rich in minerals. Among its many benefits, it is known to prevent inflammation, balance hormones, and even promote good skin health.

Besides the health benefits that are associated with this recipe, it is also a great one to keep on hand if you are looking for something you can meal prep with. It's only a few ingredients and is the perfect thing to pack for lunch to eat as a sandwich or even to eat with chips.
