October is officially the start of pumpkin season and I take it very seriously. As soon as October 1st hit (okay, let me be honest I started the least week in September) my kitchen has been filled with the scent of nutmeg, pumpkin, and even chai!

Pumpkin recipes can be quite complicated and as much as a I love a good baking challenge, I always have on deck some simple go to key recipes. This recipe is a great one to have in your back pocket.

This cookie is great because it’s allergen friendly, takes only a few minutes, and is only a few ingredients. Oh, and did I mention it’s super delicious and will give you all the fall feels.
