Chili is the ultimate comfort rainy day food! There is absolutely nothing better then to eat a hot bowl of chili, snuggle up with a blanket, and just chill. I mean you can't spell chilling without chili, they were literally made to go together.

I think a lot of people who want a meatless meal, shy away from making chili because they feel that they are just going to be eating a bowl of beans. I know this to be true because I used to be one of those people! Then I realized their are so many ways to elevate your bowl of chili so that you have that same heartiness and flavor palette as if there was meat in it. You will not miss having meat one bit.

The best part of this recipe is that it is made in a slow cooker. So you literally dump the ingredients in, and you are done! You can not ask for a more simple and delicious dinner. Also, it makes a ton so be prepared for leftovers (well not a lot of leftover because it's so good your family may just eat it all!)
