Eat . Laugh . Love . Repeat



Meat balls are not something you traditionally think of as being vegan or vegetarian. I mean the name literally says it all, MEATballs.

I love taking on the challenge of taking a recipe that's known to be "meaty" and bring those same flavors, textures, and colors into a new healthier plant based meal.

Growing up I never liked vegetables and I did my best to eat very few of them. As an adult, it makes me so excited to see that there is a wide variety of ways we can use plants that makes us actually want to eat our veggies!

The pictured meatballs I made are vegetarian but they can easily be made vegan by switching the egg to a flax egg and the parmesan cheese to nutritional yeast.
