I love tacos! They are easy to make, delicious, and so versatile. I honestly will turn anything into a taco if I can....I mean why not?
    The bad thing about tacos is that they are not necessarily the healthiest food item to eat. I typically choose to make my tacos with corn tortillas because they are gluten-free and lower in calorie. When looking for what to stuff in my taco, that's where the calories can really start to add up.

    For this recipe, I wanted something that was not only low calorie but also meatless. I know it's easy to just go out and purchase frozen "meatless" meat, and trust me I do eat my fair share of them, but if I can I prefer to eat real whole foods, food without all the sodium and preservatives added to it.

The best option I found that perfectly emulates my favorite taco meat is Lentils. These beans are a great source of protein, low in fat, high in iron, and low in calorie.

You will seriously be surprised just how perfect lentils are for your next taco Tuesday night! So rather you are vegan, vegetarian, or just trying meatless Monday this dish will be your families new favorite dish.
