  • CILANTRO (OPTIONAL)
  • JALOPENO PEPPERS (OPTIONAL)
  • SHREDDED PEPPER JACK CHEESE (OPTIONAL)
  • FROZEN ITEMS:
  • RICED CAULIFLOWER
  • CANNED ITEMS:
  • 8 TBS SALSA
  • BLACK BEANS
  • SEASONINGS:
  • 1 TBS CUMIN
  • 2 TBS BLACK PEPPER
  • 2 TBS ONION POWDER
  • 2 TBS GARLIC POWDER

Instructions:

How to cook SLOW COOKER STUFFED PEPPERS

  1. COOK BLACK BEANS ACCORDING TO CAN.
  2. COOK RICED CAULIFLOWER ACCORDING TO DIRECTIONS. 
  3. ONCE RICE IS COOKED, PAT RICE DRY WITH A PAPPER TOWEL TO SOAK UP EXTRA WATER. 
  4. SEASON WITH CUMIN, BLACK PEPPER, ONION POWDER, & GARLIC POWDER.
  5. SLICE PEPPER TOPS AND SCOOP OUT THE MIDDLE.
  6. CHOP ONION, TOMATOES, AND JALOPENO PEPPERS
  7. FILL PEPPERS- RICED CAULIFLOWER, BLACK BEANS, TOMATOES, ONIONS, JALAPEΓ‘O, 2 TBS OF SALSA PER PEPPER.
  8. PUT TWO TBS OF WATER IN BOTTOM OF SLOW COOKER
  9. ADD STUFFED PEPPERS AND COOK ON HIGH 3-4 HOURS ON LOW 5-6 HOURS
  10. GARNISH WITH CHEESE & CHOPPED CILANTRO
