When it comes to packing lunch I want something that is not only tasty but simple and filling too. 

I love this Mediterranean Chickpea Salad because it checks off all my lunch box must, plus it's jammed pack full of health benefits.

 To name just a few, here are all the reasons that Chickpeas should be a staple in your diet (If I haven't already convinced by my other chickpea filled recipes).

They are full of dietary fiber, protein, and vitamins (such as Vitamin K, Vitamin B6, and Phosphorous). Some say that they can even help to lower your cholesterol and boost both your energy and immune system.
